Black & Gold Lemon Mayonnaise

 

Ingredients:

  • 2 very fresh free range/farm egg yolks
  • 250ml Black & Gold Cold pressed rapeseed oil
  • 1tsp white wine vinegar
  • 1 tsp mustard powder
  • 1tsp salt
  • Juice of one lemon
  • Salt, freshly ground black pepper

 

Method:

MayonnaisePut all the ingredients, except the oil and pepper, into a food processor and blend until the mixture comes together. Add the rapeseed oil really slowly while still blending and the mayonnaise will start to thicken. Season. Keep refrigerated and use within one to two days.

Perfect with grilled fish, new potatoes, salad and asparagus!
